No Bake Peanut Butter Bites (Gluten Free)


You guys, these bites.

I'm not gluten free, but hell- if I were, I'd have these on the regular.

Like mini frozen Reese's PB Cups, only healthier.

I actually made these for my recent hosting of Book Club. I know, it's really a Wine Club. But, no need to get into that delicious topic now.

But anyway, a member is GF and I wanted to make something she could indulge in. I also wanted to try someting new. Win-win.

These were so good. And so easy, easy, easy to make. Literally came together in less than 20 minutes. It took me longer to find the damn almond flour in the store.

I loved the hard chocolate top layer the best, with the flakes of coarse salt studded around. That sweet/salty thing is addictive for good reason. Nonetheless though, the peanut butter layer was smooth and what pb cup dreams are made of.

I will 100% make this again. Now whether that's for company or not, that's yet to be determined. ;)

No Bake Peanut Butter Bites (Gluten Free)

Servings: 24 Bites

Adapted from: The Toasted Pine Nut


Ingredients:

Peanut Butter Layer-

1 C creamy peanut butter

1 C almond meal flour

1/4 C honey

2 TBS vegetable oil

1/4 tsp Kosher salt

Chocolate Layer-

1/2 C semisweet chocolate chips

2 TBS creamy peanut butter

1 TBS vegetable oil


Flakey salt for garnishing


  1. In a medium bowl, use a mixer to blend the PB layer ingredients: peanut butter, almond flour, honey, 2 TBS veg oil and salt. Scrape down the bowl at least once before completely mixed.

  2. Line a bread loaf pan with parchment paper and spread the peanut butter layer evenly along the bottom. Use a rubber spatula to help!

  3. In a small bowl, melt the chocolate chips in the microwave stirring every 20-30 seconds until completely smooth. Whisk in the remaining chocolate layer ingredients- 2 TBS peanut butter and 1 TBS veg oil.

  4. Pour the chocolate mixture atop the pb layer and cover pan with plastic wrap. Place in freezer for 1-2 hours before serving.

  5. When ready to serve, pull parchment out and use sharp knife to cut into bites.

  6. Sprinkle with the flakey salt and enjoy!

  7. Store covered in the freezer.
